Over the Easter break, Australians need to think carefully about food safety when packing food in their cars, throwing sausages on the ba rbie or reheating leftovers.


Parliamentary Secretary to the Minister for Health and Family Services and Member for Adelaide, Trish Worth, says taking a few minutes to think about preparing, storing and transporting food safely could prevent people from getting food-borne illnesses.


"Nothing spoils a holiday more quickly than getting food poisoning," says Ms. Worth.


"When we're relaxing with family and friends, going on picnics, camping or spending time at the beach we need to make sure we take steps to stop bacteria multiplying in our food."


"To help us do this it's important to remember the golden rule for food safety - keep HOT foods HOT and COLD foods COLD (over 60 degrees centigrade and under 5 degrees centigrade).


Ms. Worth says "If you're travelling by car put food into an insulated cooler like an esky with lots of ice and, if you have an air conditioner, make sure the cooler is inside the car and not in the boot."


"This is important because as the temperature of perishable food rises, bacteria begins to multiply and can become dangerous."


"At barbecues, remember to cook hamburger patties, sausages, chicken and pork right through so that juices run clear and there is no pink meat."


Other useful Easter food safety tips are:-


• Place cook ed meat on a clean plate. Never use the plate that held raw meat for other foods


• Take meat from the fridge only when you are ready to cook on the barbecue


• Use leftovers within a day and avoid heating more than once. When reheating food make sure it is very hot


"Australians are known to be the largest Easter egg consumers in the world," says Ms. Worth.


"This year, it is estimated that if all the Easter eggs consumed were placed end to end on a road they would stretch more than 11,000 kilometres - mo re than 3 times the distance between Perth and Sydney."


"As a nation of big Easter egg eaters I'd also like to remind everyone just how important it is to maintain a balanced diet and to eat in moderation," says Ms. Worth.


"I wish all Australians a happy and safe eating Easter."
